This is my to-go-to recipe every time I crave for a bread-textured dessert.
Simple. Easy to make. Delicious.
I can even divide the dough to make two different types of scones by adding different toppings.
Sometimes I feel like banana chocolate scones, other days it could be raisin, mixed berries or even cheese and chives.
Mixed in 5 mins, baked in 16-18 mins.

- 2 cups Gluten Free Flour (any combination of rice/potato/tapioca flour)
- 3-4 tbs brown sugar
- 1 tbs baking powder
- 1/4 tsp salt
- 1/2 cup coconut oil/ olive oil (2-3 tbs) (or combined with apple sauce)
- 1 tbs vanilla
- 1 beaten egg
- Any toppings: raisin, banana & dark chocolate, grated lemon/lime (use lemon juice instead of milk), berries
Method:
Preheat oven, fan grill 200C
Combine flour, sugar, baking powder, salt
Mix in coconut oil/apple sauce
Combine milk, egg, vanilla in a separate bowl
Add to flour mixture until moistened
Add toppings
Scoop into baking pan
Bake @fan grill 200C 8 mins to brown the dough, change to conventional oven 200C for 7 mins
Check and adjust accordingly
Makes 8-10 medium-large scones
